Lightly spray a frying pan with nonstick cooking spray. Cook veggies for 1-2 minutes on medium high until slightly soft. Add egg whites and mozzarella balls to veggies and gently continue to push eggs toward the center of the pan as they cook (this will help soften mozzarella balls).

Scoop out .25 of an avocado and spread on inside of tortilla. Feel free to add hot sauce for flavor. I love Trader Joe’s Green Dragon sauce!

 

Add egg mixture to tortilla, wrap and enjoy!
